- Veggie Crab Cakes

- 2 cups peeled and grated zucchini
- (put grated zucchini on cloth and squeeze out
- all the water)
- 1 cup seasoned bread crumbs
- 1 Tbs. Old Bay seasoning
- 1 egg
- 1 Tbs. mayo
- 1 chopped red pepper (optional)

- (I add a small grated onion)

- Form into patties and fry in hot oil.
